Most Filipino loves pork chop with rice. It's a traditional type of meal everybody loves. So, here it is...
6 boneless pork chops ( 3/4 inch thick )
1 tablespoon butter or margarine
Salt and pepper to taste ( optional )
1 cup uncooked long grain rice
1 small onion, chopped
1 garlic clove, minced
1 can ( 10-3/4 ounces ) cream of broccoli soup, undiluted
1 1/2 cups of water
1 cup ( 4 ounces ) shredded sharp cheddar cheese
1/2 teaspoon pepper
1/4 teaspoon salt
Direction:
In a skillet, brown pork chops in butter; season with salt and pepper if desired. Remove from the skillet and set aside. Reserve 2 tablespoons drippings; add rice, onion and garlic. Mix well. Stir in a soup, water, cheese, pepper and salt. Transfer to a greased 13-in x 9-in. x 2-in. baking dish; arrange chops over rice mixture. Cover and bake @ 350 for 1 hr. uncover and bake 15 minutes or until rice is tender and pork juices run clear.
